L’Arôme by the Sea Revitalises the Dining Scene in Phuket

Skilled Swiss chef Yannick Hollenstein, selects the choicest ingredients for the French set menus and à la carte dishes, with a great range of cheese and wines. Chef Yannick carefully balances avant-garde French culinary techniques and his Alpine identity to seduce diners with new textures, flavours, colours and aromas. In Phuket, Chef Yannick is inspired by the fabulous local bounty of fresh seafood, vegetables, aromatic herbs and spices.
At L’Arôme by the Sea, he incorporates the use of premium imported products and discreetly introduces locally grown, in-season produce where possible. Each dish is an ode to an ingredient and signature seasonal offers include Chiangmai strawberry composition with fresh goat cheese ice cream and rhubarb-hibiscus gelée with Tahiti vanilla, giving you a light, delicate yet full-flavored ending to a perfect meal.

Over 200 fine wines from the carefully curated cellar harmoniously pair with the cuisine at L’Arôme by the Sea. The wine list is made up entirely of selections from France, with a particular focus on the two main wine regions of France: Burgundy and Bordeaux.
Yinhua Qiu, the Restaurateur Behind L’Arôme Group
When she was 17 years old, Nanjing native Yinhua Qiu left China to pursue her studies in France, where she eventually earned a master’s degree in financial analytical engineering. She subsequently spent several years working for Accor hotels before accepting a position as a financial controller with BNP Paribas bank. At the tender age of 24, Yinhua Qiu founded the first of two highly acclaimed Chinese restaurants in Paris.
Her successful entrepreneurial decision resulted in the creation of the L’Arôme Group, which now comprises eight restaurants and offers sensory-rich, exquisite dining experiences, all based on the concept and vision of “cultural exchange.”
Yinhua Qiu explains that”While working at Accor hotels, I had the opportunity to meet some of the top French chefs, and I wanted to introduce more people across the world to their cuisine for them to discover the tradition and quality of French culinary arts. My vision of “cultural exchange” is summarized as; I wouldn’t serve French food in Paris, I won’t serve Chinese food in China. The opposite direction is far more interesting and challenging. ”
When Covid closed most borders in 2020, I chose to go to Phuket because I was familiar with the island from prior visits. I was merely using Phuket as a stopover location until I could fly back to China, but I ended up falling in love with the island and got stuck here, and after a few months, having realized that the island had too few fine dining restaurants, I decided to open one. I started looking around for a suitable location and eventually took over an old Italian restaurant by the sea.
L’Arôme by the Sea quickly attracted a sizeable following, but when we hired Swiss chef Yannick Hollenstein to take over the kitchen and rework the menu, word-of-mouth recommendations really took off, resulting in an ever increasing number of patrons and recognized awards; we earned the second-highest ranking at the TOP25 Restaurants Awards Phuket.
Today, L’Arôme Group has more than 300 staff, including Thailand, China, and Paris, while my management team consists of around 20 core people.
